You can't hide your following list specifically, but you can make your profile private. That way only approved followers can see it!
If Instagram gave an invisibility cloak for the following list, we'd all be happier! But no, you can't hide it. Privacy settings can help a bit though.
Just make your account private. It's the closest you can get to hiding your following list!
