Yeah, it's not possible to hide only your following list. Making your account private is your best bet here.
Follow this: Open Instagram > Go to Settings > Privacy > Account Privacy > Turn on 'Private Account.' Only your followers will see your stuff!
I've tried everything, but nope, can't hide just the following list. Just go private to keep things on the down-low.
