The easiest way is to use an HDMI cable. Just connect one end to your Xbox 360 and the other to your laptop’s HDMI input if it has one. If it doesn't, you'll need a video capture device.

Here’s my secret: I use an external TV tuner or a video capture card. Plug the Xbox into the tuner, then connect the tuner to your laptop via USB. Voila, instant action on your laptop screen!

You can also use a VGA cable if your laptop has a VGA port and your Xbox 360 supports it. Just connect the cables, set your laptop to display the VGA input, and you're good to go!

Just a heads-up: You'll need a capture card if your laptop doesn’t have HDMI input. It’s a bit pricey but works perfectly.
