If you suspect you've been blocked on WhatsApp, try to send a message and see if it shows just one gray tick instead of the usual two gray ticks or blue ticks. Also, you won't be able to see their last seen, and your calls won't go through.
Check if their profile picture disappears. It's not a surefire method, but combined with other signs, it's a strong clue.
