Want a specific Eeveelution? Use the nickname trick! Rename your Eevee to one of these: Sparky (Jolteon), Rainer (Vaporeon), Pyro (Flareon), Sakura (Espeon), Tamao (Umbreon), or Linnea (Leafeon), Rea (Glaceon), Kira (Sylveon) before evolving. This works only once per evolution type, though!

If you've already used the nickname trick, evolving Eevee during day or night will get you Espeon or Umbreon respectively. For Leafeon and Glaceon, evolve your Eevee near a Mossy or Glacial Lure. For Sylveon, earn 70 hearts with your Eevee as your buddy!
