Honestly, you just have to keep practicing. Focus on recognizing your opponent's hand movements. Each character has unique throw animations that you'll get familiar with over time.
Look for visual cues in your opponent's throw animation. Generally, if their left hand is extended, press 1 (square), if it's their right hand, press 2 (triangle). If both hands are extended, press 1+2 (square + triangle).
Pro tip: Spend some time in practice mode and record throws to get used to seeing the different animations. Muscle memory will help you react faster in matches.
