You gotta lower the dungeon difficulty when you create it. Set it to 'Easy' or 'Medium' and make sure your pals are on your friends list so they can see your game.
First-hand experience here: just start a lobby on Easy mode. Works every time.
From my experience, all you need to do is create a dungeon that's appropriate for their level. If they're super low level, maybe take them on a desert temple run!
Pro tip: Just use the 'Join Dungeon' option and set it to public. Low levels can hop in as long as the dungeon level isn't locked.
