Easiest way? Paint n Spray. Drive into any Paint n Spray shop, and voila, the cops lose your trail. But remember, you can't be in their direct line of sight or it won't work. Another pro tip: changing your car's color also helps in shaking them off faster.
Hide! Literally, just find a good hiding spot off the main roads - alleyways, behind buildings, or under bridges work great. Turn off your car and wait. Sometimes the ol' hide-and-seek method is the best.
Running away is overrated. Find a good cover and fight it out until you can safely escape. It's risky but feels epic when you pull it off!
