From my experience, the trickiest part is getting the water flow right. Place water 8 blocks from the edge to push mobs into a central pit, and make sure your drop is at least 23 blocks!
Mob grinders are overhyped. Just dig a pit and wait for mobs to fall in. Easy peasy!
Start by building a platform at least 24 blocks above ground. Make sure it's dark enough to spawn mobs. Water streams push them to a central hole where they fall to their doom!
