Start by making a simple curry sauce with onions, carrots, potatoes, curry powder, and chicken broth. Then, bread the chicken with flour, egg, and panko breadcrumbs before frying it until golden brown. Serve the crispy chicken over a bed of rice with the curry sauce on top. Delish!

From experience, I fry the panko-breaded chicken first and while it鈥檚 resting, I make my curry sauce by saut茅ing onions, adding in cubed carrots and potatoes, and then simmering it all in chicken broth with curry roux. Super tasty and pretty easy!
