I’ve made Khmer chicken curry plenty of times! Just get some kroeung, marinate your chicken in that with coconut milk and fish sauce, sauté, add veggies (potatoes, carrots), and simmer in more coconut milk. It's absolutely delish!

Khmer chicken curry is a fragrant, rich dish that's surprisingly simple to make at home! Start by marinating chicken in a mixture of kroeung (a Cambodian spice paste made from lemongrass, turmeric, galangal, garlic, and kaffir lime leaves), fish sauce, and coconut milk. Then, in a large pot, sauté the marinated chicken until browned, add more coconut milk, vegetables like sweet potatoes, carrots, and onions, and simmer until tender. Garnish with fresh herbs and serve with rice or noodles!

Just order it from your local Cambodian restaurant. Trust me, they do it better.

For an authentic Khmer chicken curry, use kroeung paste for a unique flavor. Mix it with coconut milk and fish sauce, marinate your chicken, and cook with veggies till tender. Serve hot!
