Just play the game! As you get better at crafting, saddles become an option. Gather materials, and you're good to go. No biggie.

Honestly, I just traded for my first saddle with another player. It was way easier than trying to craft it myself.

Saddles? Craft other stuff first, level up, then saddles are a breeze. Also, keep an eye on the market; sometimes it's easier to trade for them.
