I've been making upma for years, and it's all about timing! Dry roast 1 cup semolina until it turns light brown and set aside. In a pan, heat 2 tbsp oil, add 1 tsp mustard seeds, 1 tsp urad dal, and 1 tsp chana dal. When they splutter, add a handful of curry leaves, 2 green chilies, and an onion, finely chopped. Sauté till onions are golden. Add 2 cups water, salt to taste, and bring to boil. Slowly add semolina while stirring. Cover and cook for 5 minutes. Done and delicious!

Making upma is quite simple! Roast semolina (rava) in a dry pan until it's slightly golden. In another pan, heat oil and add mustard seeds, urad dal, chana dal, curry leaves, and green chilies. Add finely chopped onions and sauté until they're soft. Pour in water, bring it to a boil, then add the roasted semolina gradually while stirring continuously to avoid lumps. Cook until the water is absorbed and the upma is fluffy. Garnish with coriander leaves and serve hot!
