Go to Settings & Privacy > Privacy Shortcuts > Review a few important privacy settings. Adjust who can see your posts, who can send you friend requests, and who can look you up by phone number or email. Also, set your profile and cover photos to Friends Only!
Honestly, if you want complete privacy, just set everything to 'Only Me' and turn off friend requests. You can still stalk in peace!

I did this recently. Go to your Privacy Settings, set posts to 'Friends,' future posts to 'Friends,' and limit past posts. Also, lock down who can find you and see your friends list!
