Honestly, just be patient and keep choosing 'Spare'. Toriel will eventually understand and let you walk away. Persistence is key!
You need to keep selecting 'Spare' in the fight menu. Eventually, she'll realize you're serious about not fighting.
When you fight Toriel, select 'Spare' over and over again. She'll eventually stop fighting and let you go. This might take a few rounds, but stay persistent!
You can also use items to heal if you're low on HP while sparing her. It's all about surviving until she gives up!
