How to Not Show Online on WhatsApp
To appear offline, go to Settings > Account > Privacy > Last Seen, and set it to 'Nobody'. This hides your online status too!

You can also disable read receipts in the same Privacy menu, but remember, you won’t see others' read receipts either. Fair trade-off!
