Easy peasy! In GTA, your mechanic gets paid automatically. Every in-game day (which is 48 minutes realtime), a fee is deducted from your character's bank account for mechanic services. So, make sure you've got enough cash in your account to cover the daily expenses. No need to manually pay the guy!
