Unfortunately, you can't play Apex Legends in third person during regular gameplay. The game is designed primarily for first-person perspective. However, you can see your character in third person in certain areas like the lobby, when using finishers, or during emote animations! It gives you a little taste of your character's cool looks in action.

Short answer: you can't. Long answer: Apex Legends is a first-person shooter, so no third-person playing except for those brief moments during finishers or emotes. If you're really into third-person perspectives, might have to look at other games for that full experience.
