As a main Kirby player, I can tell ya: float around with his multiple jumps to dodge attacks and then swoop in with a surprise attack. Remember that air game is Kirby's best friend!
Kirby is all about versatility! Use his Inhale (B) to copy other fighters' abilities and mix things up. Don't forget to use his Stone (down + B) when falling to crush opponents, and his Final Cutter (up + B) is great for recovery and edge-guarding!
Honestly, just spam Inhale and annoy your friends by stealing their powers. It's hilarious and surprisingly effective.
