Honestly, just update the game. Devs release updates to fix bugs, add content, or for general improvement. Playing without updates might mean missing out on a lot!

Set Steam to offline mode! This way, Steam won't try to update games when you launch them. You can find this option in the Steam menu under 'Go Offline'. Just remember, you gotta go online occasionally to keep things running smoothly.
