Yo, just connect a single Joy-Con, then rotate it to landscape mode and use the SL and SR buttons as L and R. It's surprisingly intuitive!

Easy! Just turn the Joy-Con sideways. Make sure it's synced to your console, and assign it to a player in the controller settings. Boom, you're ready to smash!
