Just go into settings, choose General, then Power mode & startup, and finally set it to Instant-on. That's it!

To put your Xbox Series S in standby mode, go to 'Settings' > 'General' > 'Power mode & startup' > and select 'Instant-on'. Your console will now go into standby mode when you turn it off.
