Easiest way? Use a bot like Craig. Craig can record multiple voice channels and is pretty easy to set up. Just invite it to your server and use command `:craig:, join` to start recording.
OBS Studio is your best friend here. Just set Discord as your audio source and hit the record button. Plus, you can record your screen too!
You don't need any fancy tools. Just use the built-in screen recorder on your OS and make sure it picks up system audio. Done and done.
