It's super easy! Just press the Esc key to open the menu, click on the Record tab, then hit Record Video. Done!

I find it simplest to use the built-in Windows Game Bar. Just press Windows + G and click the record button.

You can also use Nvidia ShadowPlay if you've got an Nvidia GPU. Just press Alt + Z to bring up the overlay and start recording.
