Open XSplit, go to Broadcast and select 'Add Game Capture'. Choose Team Fortress 2 from the list, hit 'Start Recording' and you're set!

I use XSplit to record TF2 all the time. Just add a new source, select Game Capture, pick TF2 from the dropdown, and click the record button.
