I've done this! Go to Settings > Account > Recently Deleted and find your story. You can restore it from there. Easy peasy!
When you delete a story, Instagram moves it to the 'Recently Deleted' section. Just go there and restore it!
Sorry, but if it's been more than 24 hours since you deleted the story, you might be out of luck.
