Releasing animals in Hogwarts Legacy is pretty simple. First, you gotta catch 'em! Once you've got some magical creatures in your collection, head over to the Room of Requirement. Inside, you'll find vivariums where these creatures can live. To actually 'release' an animal, place it in one of these vivariums. It's more like rehoming than releasing into the wild, but hey, they seem happy enough!
