From my experience, the quickest way is to uninstall Among Us and disable auto-updates in your app store settings before reinstalling.

Just uninstall and reinstall the game to revert to the previous version. Works like a charm every time!

If you're on PC, you could try rolling back to a previous version using Steam's beta feature. Right-click Among Us in your library, go to properties, and select the beta tab.
