To ditch the cops in GTA San Andreas, the classic way is to find and collect a police bribe. These are scattered around the map, and each one reduces your wanted level by one star. Another method is to paint your ride at a Pay 'n' Spray, which instantly removes your wanted level as long as the police don't see you enter.

Honestly, just keep driving. Eventually, if you're good at dodging, the police will lose sight of you. Work on those driving skills!

Just type 'AEZAKMI' if you're on PC to disable your wanted level altogether. Works like a charm every time.
