Easy peasy! Just delete your save data through the Switch's System Settings under Data Management. Select Undertale, and poof, you're back to square one.
To reset Undertale on the Switch, go to System Settings, then Data Management, and delete the save data for Undertale. Voila! Fresh start.
Hard reset is for quitters. Just play through the game differently!
