Just hold the power button and the eject button at the same time. Keep holding until it beeps twice.

Hold down the Xbox button on the console for 10 seconds to shut it off, then press and hold the Xbox and Eject buttons until you hear a second power-up tone. This boots it in low-res mode so you can fix your settings.
