Why restart? Just let the chaos continue! But if you must, quitting the game from the Xbox guide and launching it again works fine.

I've had to restart Fortnite a bunch of times on my Xbox, just go to the Home menu, highlight Fortnite, press the Menu button (with the three lines), and select 'Quit.' Then start the game again.
