For me, it was all about hitting the Options menu, setting the language, and then starting the game. It saved automatically!

Settings menu > Language > Choose your language. The game should remember it for next time. No need to overthink it!

I had to go into the Options, set my language, and then make sure to exit the menu properly. Worked like a charm!
