Nope, can't skip. You gotta play through it. It's worth it though, story's solid!
Actually, while you can't officially 'skip' the story mode in GTA 5, there are ways to make it go faster. Speedrun strats can help you blaze through missions. Also, knowing which missions are crucial and which you can just breeze through helps a lot. Been there, done that, got the t-shirt.
