The simplest way to restart Hay Day is to use a different Google or Apple ID when you reinstall the game. This way, you can have a completely new farm without affecting your old data. Just be mindful that you'll lose all progress from your old farm.
Honestly, starting over isn't really worth it. Just keep upgrading your current farm. More fun that way!
If you want to start over in Hay Day, just delete the app from your device and then reinstall it. Once you open it again, it should give you the option to start anew. Farming fresh, baby!
