Honestly, just set it to update only when you launch the game. That way, it's kinda like it never updates unless you really want to play.

Easy peasy lemon squeezy! Just open your Steam library, right-click on Skyrim, go to 'Properties,' then 'Updates' tab, and select 'Only update this game when I launch it' from the dropdown menu. Steam won't auto-update Skyrim unless you try to play it. This way, your mods stay safe and you're the master of updates!
