Easiest way? Just press the D-pad left or right. It'll cycle through your equipped weapons faster than you can say 'Diablo!'

Hold the Left Bumper (LB) and then use the Right Stick to select the weapon you want. Quick and deadly!

You can switch weapons by going into the inventory (press the Menu button) and manually selecting the weapon you want to equip. A bit slower, but it gets the job done.
