Go to your character's inventory, find the helmet in the armor section, and click 'unequip.' No more helmet hair!

You can't take off your helmet during active missions. Trust me, I've tried. Wait until you're in a safe zone or your ship.

To remove your helmet in Starfield, just hop into your character's equipment menu, click on the helmet, and unequip it. Freedom for your head!
