Try a third-party app or browser extension like 'Who Deleted Me', but be careful with giving access to your account!
You can use Facebook's native activity log to see if a friend is no longer on your list, but you gotta manually check the list under 'Friends'.
Just ask them... if they're really your friend, they'll tell you. ;-)
