You can't directly turn off hype comments on Instagram Stories, but you can control who can reply. Just go to your profile, tap the menu, select Settings, then Privacy, and finally Story. From there, you can limit who can reply to your stories. Voilà!
I once had my story flooded with emojis and exclamations, so I just went to Story settings under Privacy and changed who could reply. Instant peace!
