In the Retro Bowl menu, go to Settings and you'll find an option to turn off simulation. Easy peasy!

You can't actually turn off simulation in Retro Bowl. You just need to play it manually to avoid the sim.

I always go to the Team screen, then tap on the game, and it'll give you the option to play manually or simulate. Just choose manual!
