To turn off chat in Among Us, go to Settings > Data > Chat Type, and set it to 'Quick Chat Only'.

You can disable chat by switching to 'Quick Chat Only' under the Data tab in the Settings menu.

From my experience, just switch to 'Quick Chat Only' in the settings, and voila, no more open chat!
