To transform into Super Sonic in Sonic Generations on Xbox 360, you'll need to collect all 7 Chaos Emeralds by completing the story stages and special challenges. Once you have them, you can finally unleash Super Sonic by collecting 50 rings in any stage and pressing the Y button. Just make sure to keep grabbing those rings or you'll revert back!
