Sadly, Goro isn't unlockable on the PS3 version of Mortal Kombat. He's just there to stomp on you during boss fights.

You can't unlock Goro as a playable character in Mortal Kombat for PS3. He's only a boss character. Sorry to crush your dreams!

Trust me, I’ve tried unlocking Goro through every cheat and secret in Mortal Kombat PS3. It just isn't possible— he's only a non-playable boss.
