Unlocking nozzles is pretty straightforward: defeat Shadow Mario in different levels, then they become available in Delfino Plaza.
You get the Hover Nozzle right from the start, but to unlock the Rocket and Turbo Nozzles, you have to defeat Shadow Mario in certain levels.
To unlock nozzles in Super Mario Sunshine, first, you'll need to collect Shine Sprites and progress through the game. Find the Hover and Rocket Nozzles in the main stages after unlocking them in Delfino Plaza for use anywhere!
