To unlock Roy, try playing through Classic Mode with Yoshi. It should eventually lead you to a battle with him!

Just play versus matches! After around 64 matches, Roy should challenge you—beat him, and he’s yours!

Just use the Classic Mode. I unlocked Roy after finishing it a few times with different characters. Easy peasy!
