Make sure your Xbox is connected to the internet, then navigate to 'My games & apps'. Find Fortnite, press the menu button on your controller, and choose 'Update'.

Keep your Xbox on 'Instant On' mode, and it will automatically update Fortnite. If you don't have it on, just go to 'My games & apps' to update manually.
