To upgrade your pockets in Animal Crossing, you gotta earn Nook Miles by completing various activities around your island. Then, head over to the Nook Stop terminal in Resident Services. Look for the Pocket Organization Guide which costs 5,000 Nook Miles. Buying this will upgrade your pocket space, letting you carry more items. Later in the game, you can buy the Ultimate Pocket Stuffing upgrade for even more space!

Honestly, I never bothered upgrading my pockets. Part of the fun is managing your inventory. Makes you think more about what you really need to carry!
