You can use the Xbox app on Windows 10 to stream your Xbox One to your laptop. Just connect the Xbox and laptop to the same Wi-Fi, open the Xbox app, and select 'Console streaming'.

HDMI is a no-go. Your laptop's HDMI port is mostly an output, so you'll need to use the Xbox app for remote play instead.

I've done it a couple of times: get the Xbox app on your laptop, make sure both are on the same Wi-Fi, and stream away! Easy peasy.
