Yes, the original Dragon Ball series, Dragon Ball Z, and Dragon Ball Super are pretty much the gold standard of canon in the Dragon Ball universe.

Oh, absolutely! Dragon Ball, Dragon Ball Z, and Dragon Ball Super are all considered canon as they follow the story arcs laid out by Akira Toriyama. But beware of fillers!
